So, as some of my close friends know, I am currently following a paleo/primal style way of eating.
No, not a diet (that word makes me gag)..just a way of eating. Meaning, I am eating mostly veggies, fruits, meat, eggs, nuts, oils & some dairy. I am eating A LOT more fat than I was previously, mostly in the form of egg yolks, coconut oil, olive oil, avocado, nuts, butter & animal fat..it makes me feel gooooooood 🙂 Basically getting a good mix of protein, fats & carbs at all meals. Focusing on eating real, whole foods. Probably eating close to 80-90% paleo, with a little wiggle room for occasional treats & non-paleo noms!
Notable changes from switching to paleo/primal:
- Less bloating (hallejuler)
- More stable energy throughout the day
- Cravings for sugar have significantly went down
- My taste buds are a lot more sensitive to sugary foods now, sugary foods I used to eat taste almost TOO sugary for me now
- My digestive system is working quite well, if you catch my drift 😉 #Imreallymature
My first 2 weeks were kind of rough during the “detox” stage. I really found you just have to push through it though. Apparently detoxing your body doesn’t feel too great. You will feel lethargic, cranky & just plain crumby. My advice: Get support from loved ones, put your big girl panties on & EAT ENOUGH CALORIES.
One mistake I think many people make when switching to paleo is simply not eating enough. Think about it: you cut out the grains and up your veggies, naturally there will be a drastic drop in caloric intake. So make sure you either just transition to paleo-friendly carbs or up your fats a good amount to make up for the calories. Your body will thank you.

There is a booty load of information on paleo & primal online, just make sure it is from a credible source! There are tons of paleo chat boards, and I am not trying to say they are all wrong, but proceed with caution when listening to advice found on there.

And now, without further ado, I give you..
Caveman Chocolate Chip Cookies [paleo/gluten free]
Yields 30 cookies
- 2 cups almond flour
- 3 T coconut flour
- 1/2 cup + 2 T organic evaporated cane sugar
- 1 tsp baking soda
- 3/4 tsp salt
- 2 eggs
- 1/2 cup organic extra virgin coconut oil, melted
- 1 cup chocolate chip (I used half dark chocolate, half semi sweet; can sub for dairy-free chocolate for a true paleo treat)
Mix dry ingredients in a large bowl. Add the eggs & then the melted coconut oil. Fold in the chocolate chips.
Scoop onto cookie trays using a tablespoon, my cookies were about a heaping tablespoon each.
Cook at 325 F for 12-15 minutes, or until golden. DO NOT overcook, they will turn out very dry!
Get this: only 9 grams of carbs per cookie 😮
Enjoy this nice paleo treat with a big glass of almond or coconut milk.
Dunk, chew, repeat.
